a (very long) thanksgiving report

Dsc_0083_1_1 thanksgiving dinner went off without a hitch. and it was delicious, if i do say so myself. i think the crowd favorite was the candied yams. took a chance and made a pecan topping instead of marshmellows, and it was soooooooooo good. if you want it, HERE is the recipe on allrecipes. my personal favorite, however, was the creamed corn. oh my gosh this recipe was SOOO good.

  • 1/2 cup butter
  • 1 (8 ounce) package whipped cream cheese
  • 1 cube chicken bouillon
  • 1 (10 ounce) package frozen corn kernels, thawed
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon ground nutmeg
  • salt to taste
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crushed buttery round crackers
  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch casserole dish.
  2. In a saucepan over medium heat, melt the butter and cream cheese, and dissolve the chicken bouillon. Mix in the corn. Season with pepper, nutmeg, and salt. Stir in the cream. Transfer the mixture to the prepared casserole dish. Sprinkle with cheese, and top with crackers.
  3. Bake 20 minutes in the preheated oven, or until lightly browned.

i also decided to make the cranberry sauce, and i can't believe how much better it is than canned (if you like texture). just boil 3 cups cranberries, 1 cup water, 1 cup sugar. that's it! and chill. delicsh. also my friend ashley gave me the tip to use sour cream, butter, AND cream cheese in the potatoes, then after mashing/mixing put in the oven to make the top crusty. um, TO DIE FOR. and the turkey was great...but the credit for that goes to the fact that my dad was a meat cutter for  a million and a half years and can over see and make sure you make no mistakes and take it out at the exact right time, and carve it right. so no fear there. that sure takes stress off.
