4 slices bacon, cut into 1-inch pieces
1 medium onion, chopped
1/4 cup all-purpose flour
2 cans (14.5 ounces each) reduced-sodium chicken broth
1 large baking potato, peeled and diced
1 head broccoli (about 1 pound), cut into bite-size florets, stalks peeled and thinly sliced
1 package (10 ounces) frozen corn kernels
1/2 teaspoon dried thyme
1 cup whole milk
coarse salt and ground pepper
in a large pot, cook bacon over medium-low, stirring occasionally, until crisp, 8 to 10 minutes. using a slotted spoon, transfer to a paper-towel-lined plate. increase heat to medium. cook onion, stirring, until it begins to soften, 6 to 8 minutes.
add flour; cook, stirring constantly, 30 seconds. add broth and potato; bring to a boil. reduce to a simmer; cook until potato is tender, about 10 minutes. add broccoli, corn, thyme, and milk. cook until broccoli is crisp-tender, 8 to 10 minutes. season with salt and pepper. serve topped with bacon.
leave the bacon out and sautee the onions in a little butter to make it vegetarian (and use veg stock). i also used frozen broccoli with no problem. serve with warm sourdough bread, mmm, heaven. seriously my mouth is watering remembering it. as an added bonus it was really fast to make.
recipe from everyday food, my favorite dinner inspiration magazine. while the pictures are always lovely, and i learn so much from the articles, i have to admit that sometimes the recipes in it aren’t delicious. it mostly is inspiring because it makes me feel like making dinner! this recipe, however, was a total winner and definitely will be added to our cool weather rotation. i made it sunday night and am already wanting to have it again. the family gobbled it up, and grant happily took leftovers to work the next day. give it a try!

i always think the recipes in that magazine sound great, but have never tried any because i really dont' buy it even though i want to buy it!

I'm glad that today you are feeling better. I have never left comment on your blog and i just started reading it about a month ago. I feel your pain and can relate to you in so many ways. I do have one child he's going to be four in one month and my husband and I have been trying since he was born to have another child. I've had two miscarriages along the way and every month i pee on a stick hoping that i'm pregnant. I've been to way too many doctors and have had way to many test done and been around way to many drugs that they (doctors) are trying to throw at me. We've been thinking about adoption but then we think we did it once why can't it happen again. It's hard, it's not fair, and I hate it. I hope its okay that i'm reading your blog for some reason it does make me feel better to hear your struggle and hear your feelings. I guess it makes it easier on me to get through waht i'm going through like theirs other couples out there going through the same thing even though i pray that no one has to go through this. I hope something works out for you.

What I love about soup is the ability to totally wing it. You'd have to work pretty hard to mees up soup!

Happy to read that you are feeling better - and for the record I have kept the twins home 'just because' too! Why not - it's Kindergarten not college, right??!!
I think switching doctors is a good step - I had a few that did nothing for my self-esteem and so you move on. You will find someone caring, someone who is doing this for the right reasons and it will all come together beautifully. Love and prayers to you.
I am inspired by Everyday Food too - I need motivation and pretty pictures!! I will have to try this recipe - but I'll need to sub in turkey bacon - hope it's good that way!!

That looks super yummy! I am not one to revel in, or wish for, the cold weather, but looking at that picture makes me want it to be freezing cold and snowy out while I am inside, wrapped in a blanket eating a bowl of that soup.
I'm glad you're feeling better today. I didn't comment yesterday, but it made me so happy that you kept Cate home to keep you company on a bad day. Those days always end up being worth it.
I miscarried several years ago when I was in the process of getting a new doctor. I ended up getting an emergency appointment with Dr. Macy at the Avenues Women's Clinic here in Salt Lake. She was very kind and sympathetic and didn't talk down to me, even though I was newly wed and scared out of my mind at what was going on. I really don't know if they work with infertility, but it's worth checking into.

The soup looks amazing. It reminds me of a similar recipe I got from Everyday with Rachel Ray. Although her's did not have bacon and as we all know, bacon makes everything tastier. Thanks for the new recipe to try. take care.

I am wound a little tight most of the time too, and wish I could have heard those whisperings so clearly at a younger age, but the good news is the older I get, the more I mellow out.
