i have a serious problem with lemon bars. i make them, like, never, because of it. but little sis called for mom's recipe yesterday and just reading it to her made me have to have them. and so, less than 24 hours later...this is all that remains. i had help, but still... just despicable. i would like you all to get fat, too. and so i am sharing the recipe for my mom's perfect lemon bars:
crust: cream together 1 cup butter or marg and 1/2 cup powdered sugar. add and mix well 1/2 tsp. salt and 2 cups flour. pat into a greased 9 x 13. bake at 350 for about 18 minutes. meanwhile make filling.
mix together and then pour over hot crust: 4 slightly beaten eggs, 2 cups sugar, 1/2 tsp baking powder, 1/4 cup flour, 1/4 cup lemon juice, and grated rind of one lemon. bake at 350 for 20-25 minutes. when done, sprinkle with powdered sugar. cut when cool. eat the whole pan while watching 30 rock.

mmm lemon bars. i have the same problem with brownies that you have with lemon bars. zero resistance. you'd think it was cookies with how few are left after the cookie exchange yesterday, but no, brownies are my downfall.

Ya know I don't make them for the same reason but I printed off one from Amy's Sweets that was on Martha Stewart. Now I will make both recipes. Compare and contrast and expand. Aghhh!

Well of course you eat the whole pan ; ) Those are just really, really good. I am afraid when my mom makes those, because I never know if I'll get more than one square, unless I'm a pig and hoard some : )

I don't know why, but I distinctly remember your mom's lemon bars. Maybe it was the first place I ever tried them. I'll have to give the recipe a go!

I can't make them either, because the pan is gone within 24 hours. They are so addicting. And with a diet coke on the side...yum.

I am always a fan of lemon bars (they so remind me of my mom and being a little kid in the NH summers). But, what I liked most about your post was the title. I love that song and even found myself singing "La la la la Lemon..." as I read! There's a compilation album called "For the KidS" with a version of that song sung by Barenaked Ladies (along with Mahna Mahna by Cake, Rainbow Connection by Sarah McLachlan, and I've Got to Be Clean (a song I don't know) performed by one of my all-time favorite bands, Guster, and many more). It's such a fun cd. I bet you and your little Cate would have fun listening to it while doing crafts!

JC Handmade sent me here this afternoon and I couldn't resist. My lemon bars just came out of the oven. Amazing! We are eating them, not quite as per your instructions, while drinking wine and watching old Sledge Hammer! episodes.

I stumbled across your blog last week - it was a link for this recipe from another site. I made them a few days ago and they were yummy! Think I baked them a tad too long as the edges were on the hard side, but they were perfectly timed as I had unexpected company two days in a row! Thanks
