ingredients
4 1/2 pounds very ripe peaches (about 20 medium), washed, blanched, peeled/ pitted, and cut into slices
4 cups of sugar + 1 heaping teaspoon cinnamon
directions
puree peach slices in a food processor till they are pulpy (not liquid). combine peach pulp, sugar, and cinnamon in a large pot. cook until thickened, stirring frequently (approx. 30 minutes- will vary).
ladle hot peach butter into hot jars (follow proper canning procedures), remove air bubbles, adjust lids. process for 10 minutes (higher elevation 15) in a boiling water canner. yields about 5 pints.
warning/good thing, depending on your view of it: eating massive amounts of peach butter on costco's honey walnut wheat bread will result in a cleansing of the bowels.








That sounds so good. We just finished off 2 boxes of peaches. I canned 16 pints of peach halves and then froze the rest (that we didn't eat fresh). I kind of wish I had this recipe last week!

Hi Kelly, I know I've mentioned it before, but I love your blog! I wanted to ask you a couple of things. When I get organized and get a list of my favorite "reads" to put on the side bar of my blog, can I add yours? Also, I love to go back through your archives (very very inspiring!), and I was wondering (by chance) if you still have a pattern available for an embroidery kit that you sold in the past. I wish I had checked it out prior to typing this comment so that I could give you more detail, but I do remember that it had a sweet little bird etc. I know you probably need more than that to go on, so I will check your archives again and will get back with you on the specifics. :0) I would love to buy one from you if possible.) Thanks for this recipe! Your post last week about canning got me all gritty and excited although I've never canned anything and want to SO BAD. I think I might give this a try..

That looks beautiful and so incredibly tasty! We had two fabulous peach trees growing up, that so traumatically got killed. I miss home grown peaches and pears so much. Mmmm. Yum.

This looks so good! I was JUST wondering what to make with all my peaches...problem solved. :)
I've been using agave nectar in place of sugar for all sorts of things (even baked goods). I think the ratio is 1/3 cup agave nectar to 1 cup sugar...sometimes you have to play around with it a little.
btw, I rarely comment on blogs, and so few of them hold my interest for any long period of time...but your's is definitely one of the exceptions. I love it! thanks!
